Bat Cookies

Here is a great recipe that I found at Mountain Breeze. They are Bat Cookies and they just look so good. I had a request to make bat cookies and I didn’t even know that they existed but apparently they do. So, if you are also on the lookout for bat cookies then here is the perfect recipe for you. And they look rather easy to make and also quite delicious…but I think that all cookies are pretty delicious actually :)

9 oz Chocolate wafer cookies
4 oz Milk chocolate candy melts

Use a serrated knife to carefully cut 18 of the cookies into quarters.
Save remaining cookies for another use.
For each bat, place 2 cookie quarters 1/4″ apart on waxed paper.
Repeat with remaining quarters.
Melt candy melts.
Drop about 1/2 teaspoon of melted candy at center of each bat, connecting cookies.
Use a toothpick to smooth melted candy into a uniform circle.
Cool completely before removing from waxed paper.

Spooky Spiced Chicken

Here is one from the Hookery Cookery. I love to make those holiday dessert but how about some holiday meals for the family! And chicken is a big hit here so I found a recipe for Halloween Chicken called Spooky Spiced Chicken. This is a very simple recipe and if you love spicy things then you are just going to love this! And the good thing about this recipe is that it really does not take that long to prepare and to make or to clean up!

Ingredients:

1 x 3lb (1.5kg.) chicken, cut into quarters

1 garlic clove, crushed

salt and pepper

5 fl. oz. (150ml.) plain yogurt

half a teaspoon of ground cardamom

1 teaspoon of ground coriander

1 teaspoon of ground cumin

Cooking Instructions:

Place all the ingredients, apart from the chicken, into a shallow bowl and mix well

Add the chicken quarters to the marinade and leave for 3 hours at room temperature

Line a grill pan with foil then place the chicken quarters on the grill rack

Grill for 20-30 minutes, or until the chicken is cooked

Spider Muffins

Here is an awesome recipe. I goofed it up the first time I made it which was on Saturday becuase I didn’t have sour creama dn thought I could substitute for it…but you really can not! However, I tried again on Sunday and they just came out so good everyone really liked them…well, except for my dad but he doesn’t really like sweets…I know can you believe it!

Anyways, I got this recipe from Razzle Dazzle - one of my favorites. And these would be the perfect treat for that class party or that halloween party you are having or going to!

12 oz. chopped semisweet chocolate
1/2 C. unsalted butter
1/2 cup sour cream
1 C. sifted cake flour
1/2 t. baking soda
1/4 t. salt
4 large eggs
1/2 C. brown sugar
2 t. pure vanilla extract
1 1/2 C. semisweet chocolate chips, divided
3 oz. white chocolate

Preheat the oven to 350 degrees and line 12 muffin cups with paper liners. In a double boiler, or very carefully in a microwave, melt the 12 ounces semisweet chocolate and butter together until very smooth. Remove from the heat and let cool for a few minutes.

Mix in the sour cream, and stir until uniformly mixed. In a large bowl beat the eggs one at a time until lemon colored. Add the sugar and beat for three minutes. Beat in the melted chocolate mixture and the vanilla extract. Add the sifted flour, soda, and salt to a sifter and sift the mixture into the chocolate mixture. Mix to barely moisten all of the ingredients. Mix in 1 cup of the chocolate chips. Pour the batter into the prepared muffin cups. Sprinkle the remaining 1/2 cup chocolate chips over the tops of the cupcakes.

Bake for about 20-25 minutes, or until the muffins are firm. Remove the muffins from the tin and cool on a wire rack. Once the muffins are cool to the touch, melt the white chocolate. Place the melted white chocolate in a frosting bag with a small tip, or use a condiment container or other container with a fine tip. Draw spider webs (or other shapes) on the cupcakes with the frosting. Let the chocolate cool and harden before serving or packaging.

Pumpkin Donuts

I just really felt like something pumpkinny yesterday. And I had thought…I wonder if there was a recipe out there for pumpkin donuts…wouldn’t that just taste so incredible? At least I thought so. And I actually did indeed find a recipe that was pumpkin donuts. I am so excited! So, I will be making that either tomorow or this weekend sometime. Here is what I found from Epicurious.

Spiced sugar
1 cup sugar
4 teaspoons ground cinnamon
2 teaspoons ground nutmeg
Doughnuts
3 1/2 cups all purpose flour
4 teaspoons baking powder
1 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon baking soda
1/4 teaspoon ground nutmeg
1/8 teaspoon ground cloves
1 cup sugar
3 tablespoons unsalted butter, room temperature
1 large egg
2 large egg yolks
1 teaspoon vanilla extract
1/2 cup plus 1 tablespoon buttermilk
1 cup canned pure pumpkin
Canola oil (for deep-frying)

Powdered Sugar Glaze
2 cups powdered sugar
Whipping cream

preparationFor spiced sugar:
Whisk all ingredients in medium bowl to blend.
For doughnuts:
Whisk first 8 ingredients in medium bowl to blend. Using electric mixer, beat sugar and butter in large bowl until blended (mixture will be grainy). Beat in egg, then yolks and vanilla. Gradually beat in buttermilk; beat in pumpkin in 4 additions. Using rubber spatula, fold in dry ingredients in 4 additions, blending gently after each addition. Cover with plastic; chill 3 hours.

Sprinkle 2 rimmed baking sheets lightly with flour. Press out 1/3 of dough on floured surface to 1/2- to 2/3-inch thickness. Using 2 1/2-inch-diameter round cutter, cut out dough rounds. Arrange on sheets. Repeat with remaining dough in 2 more batches. Gather dough scraps. Press out dough and cut out more dough rounds until all dough is used.

Using 1-inch-diameter round cutter, cut out center of each dough round to make doughnuts and doughnut holes.

Line 2 baking sheets with several layers of paper towels. Pour oil into large deep skillet to depth of 1 1/2 inches. Attach deep-fry thermometer and heat oil to 365°F to 370°F. Fry doughnut holes in 2 batches until golden brown, turning occasionally, about 2 minutes. Using slotted spoon, transfer to paper towels to drain. Fry doughnuts, 3 or 4 at a time, until golden brown, adjusting heat to maintain temperature, about 1 minute per side. Using slotted spoon, transfer doughnuts to paper towels to drain. Cool completely.

For powdered sugar glaze:
Whisk powdered sugar and 4 tablespoons whipping cream to blend. Whisk in additional cream, 1 teaspoon at a time, to form medium thick glaze. Can be made up to 3 hours ahead. Add doughnut holes to bowl of spiced sugar and toss to coat. Spread doughnuts on 1 side with Powdered Sugar Glaze. Arrange doughnuts, glazed side up, on racks. Let stand until glaze sets, at least 30 minutes.

Makes about 24 doughnuts and 24 doughnut holes.

Cranberry Jelly

My husband loves Cranberries - here is a great recipe for cranberry lovers!

Serving Size : 1 Preparation Time :0:00

2 cups Cranberries
3 ounces Liquid pectin (regular)
1 cup Concentrated apple juice
5 tablespoons Glycerine
1/4 cup Lemon juice
1 tablespoon Unfl.gelatin or 2 tb.freezer

Wash and pick over cranberries, discarding any that are soft. Place in a deep saucepan and add fruit juices. Cover and simmer for about 20 minutes, until fruit is soft. Mash to break up any berries left whole.

Strain in food mill to remove seeds. Return to saucepan and heat to boiling. Add pectin, glycerine and gelatin, stirring well. Boil for 1 minute. Remove from heat. Skim and pour into hot, sterile pint jars, leaving 1/2 inch at top. Cap with hot sterile lids. Process in boiling water bath for 5 minutes after water returns to boiling. If any jars fail to seal, refrigerate and use within 10 days or freeze for later use. Makes 3 1/2 cups.

Pumpkin Recipes

I just love pumpkin recipes but I only like them around this time of year. I were to have something pumpkin flavored in February I just would not like it. But from September to December I just love it! I just had a pumpkin muffin and it was just so delicious with a special glaze on top….mmmmm….And I do not like stuffed pumpkin but I like roasted pumpkin seeds, pie, bread…the sweet stuff :) If you want great pumpkin recipes check out The Pumpkin Nook - it is great!

Pumpkin Cookies

Here is a great recipe site with a lot of great Halloween recipes. My favorite so far is the Pumpkin Cookies. This would make for a great fall treat or something that you child could bring into school for their Halloween party. This would actually be a fun recipe that you child could help you out with also. I made them this weekend and they were delicious and a big hit with the family and really easy to make too. Try it!

MAKE-A-FACE PUMPKIN COOKIES

1 1/2 cups Bisquick® baking mix
1/2 cup packed brown sugar
1/2 cup canned pumpkin
1 1/2 teaspoons ground cinnamon
1 teaspoon vanilla
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1 egg
Assorted candies (licorice candy,
candy-coated peanut butter candies, candy
coated chocolate candies)
Preparation :
Place waxed paper on microwavable plate. Mix all ingredients except candies until very soft dough forms.

Drop dough by 2 rounded tablespoonfuls onto waxed paper; spread to make 3-inch circles. Makes 3 cookies at a time. Decorate with candies to make monster faces.

Microwave uncovered on High 1 minute. Turn plate 1/2 turn. Microwave 30 seconds to 1 minute longer, checking once or twice until cookies are puffed and dry.

Slide waxed paper with cookies onto wire rack. Cool 5 minutes; remove cookies waxed paper to wire rack. Repeat with remaining dough. 9 or 10 cookies.

Candy Apples

Personally, I like my candy apples to be with MacEntoch Apples but Red Delicious is also very good too. I like caramel apples but the candy apples are just very seasonable right now. Here is a great recipe that I have used and I goofed it up the first time but hte second time I did it it came out really great. If yoiu goof up just try again…just like with anything! I got this from Home Cooking

12 red delicious apples
12 wooden ice-cream sticks
4-1/2 cups sugar
3/4 cup light corn syrup
1 teaspoon red food coloring
1-1/2 cups water
1 cup chopped peanuts

Line a baking sheet with parchment paper or Silpats. Set aside. Wash and dry the apples. Insert a stick through the stem of each, leaving about 2 inches of the stick for gripping. Place the chopped peanuts in a deep bowl large enough to roll apples in.

Place the sugar, corn syrup, food coloring, and water in a heavy saucepan over medium heat. Bring slowly to a boil while stirring constantly and cook until the ingredients are dissolved.

Insert a candy thermometer into the liquid and continuing cooking, without stirring, until the temperature reaches 290 degrees F. This should take about 20 minutes.

Remove the syrup from the heat and dip the apples, one by one, coating each evenly. Work quickly so the sauce doesn’t harden. As you finish dipping an apple, roll it in the peanuts to coat evenly. Place each apple standing on the prepared cookie sheet. Let the apples cool for at least 1 hour before servinig.

Candy Corn

This is the only time of the year where I actualy like candy corn…I think that is a very seasonal candy and in September through October I like it otherwise I relaly don’t…kinda weird. But here is a cute candy corn recipe for all those candy corn lovers out there! I got this from CD Kitchen.

1 cup sugar
2/3 cup white corn syrup
1/3 cup butter
1 teaspoon vanilla
2 1/2 cups powdered sugar
1/4 teaspoon salt
1/3 cup powdered milk
food coloring (optional)

Combine sugar, butter, and corn syrup in pan and bring to a boil stirring Constantly. Turn heat low and boil 5 minutes. Stir occasionally. Remove from heat and add vanilla. In a separate dish, combine powdered sugar, salt, and powdered milk. Add all at once to the mixture in the pan. Add food coloring if desired. Stir until cool enough to handle. Shape into creative pieces.

Corned Beef Hash

Corned Beef Hash - Great for St. Patricks Day!

Corned Beef HashYield: Makes 4 servingsIngredients: 2large russet potatoes, peeled and cut into 1/2-inch cubes
1/2teaspoon salt
1/4teaspoon black pepper
1/4cup (1/2 stick) butter or margarine
1large onion, chopped
1/2pound corned beef, finely chopped
1tablespoon prepared horseradish
1/4cup whipping cream (optional)
4poached or fried eggs

Preparation:
1.Place potatoes in 10-inch skillet. Cover potatoes with water. Bring to a boil over high heat. Reduce heat to low; simmer 6 minutes. (Potatoes will be firm.) Drain potatoes in colander; sprinkle with salt and pepper.
2.Wipe out skillet with paper towel. Add butter and onion; cook and stir over medium-high heat 5 minutes. Stir in corned beef, horseradish and potatoes; mix well. Press down mixture with spatula to flatten into compact layer.
3.Reduce heat to low. Drizzle cream evenly over mixture, if desired. Cook 10 to 15 minutes. Turn mixture with spatula; pat down and continue cooking 10 to 15 minutes or until bottom is well browned. Top each serving with 1 poached egg. Serve

Valentine’s Day Pizza

This is a great book and great little recipe for a class or just for a childrens valentines day party at home. It is from Valentine School Parties . . . What Do I Do? by Wilhelminia Ripple You can get this book at Amazon for around $14

Toothpicks (one per child)
Assorted permanent markers
Pizza dough
(homemade or store-bought)
Pizza sauce
Mozzarella cheese
Pepperoni
Serving bowls
Serving spoons
Several baking sheets
Napkins
Optional:
Pizza toppings
Directions:

Color the tips of the toothpicks using permanent markers. These will be used to color code the children’s pizzas.
Form the dough into heart shapes.
Place the ingredients into the bowls with the spoons. Let the children create their own pizzas. Then have each child stick his toothpick in his pizza, color tip up.
Place the pizzas on the baking sheets, with no more than one of each colored toothpick per sheet. Give each baking sheet a number. Have the children remember which color they picked and which baking sheet number it’s on. This way the children are sure to get their own pizzas.
Bake at 400 degrees in the school’s kitchen oven until the dough is brown and the cheese has melted.
Cool slightly and serve on napkins.
Note: get permission to use the schools’ cafeteria.
Variation: Form the dough into heart shapes and pre-bake them before the party begins. Then let the children create their own pizzas. Broil pizzas in the oven until hot or the cheese has melted.
