Black Olive Appetizers

My husband LOVES black olive…he would eat the whole can if I let him in just one sitting! Personally, I don’t really like them but he does so I try to find and make new things that have black olives in it once in a while….this one was a hit. I do not remember where I got it from though.

1 cup chopped black olives
1-1/4 cups sharp cheese
1/8 cup chopped onion
1/2 cup Mayonnaise
Mix it well and spread on crakers or party rye – bake until melted…Enjoy!

Curried Hummus

Here is a great recipe for Curried Hummus:

(i have a slight intolerance to tahini/sesame and so i’ve reduced the
amount of tahini in a normal hummus recipe to allow me to indulge!)

1 can chickpeas
1 onion, chopped
8 cloves garlic, chopped
1 T olive oil
2T tahini
1 T curry powder
salt and pepper to taste

1. sautee the onion and garlic in olive oil.
2. throw everything into a food processor and blend. for a creamier
consistency, add a bit of water.
3. chill for an hour before serving with pita bread and/or baby carrots

(if you have a smaller food processor, like i do, then i suggest cutting the
recipe in half)

Clam Dip

I found this Clam Dip Recipe and I used it this weekend for my Mother’s Day picnic and everyone just loved it!!! It is from Diana Rattray, Your Guide to Southern U.S. Cuisine.

INGREDIENTS:
1 can (8 ounces) minced clams
1 clove garlic, cut in half
8 ounces cream cheese, room temperature
2 teaspoons lemon juice
1 1/2 teaspoons Worcestershire sauce
drop or two of Tabasco sauce
1/2 teaspoon salt
pinch pepper
PREPARATION:
Drain clams, reserving 1/4 cup of the juice. Rub a medium serving bowl with the garlic halves. Add cream cheese; beat with fork until smooth. Mix in remaining ingredients and the reserved 1/4 cup of clam juice.

Blend well. Cover and refrigerate for 1 hour before serving. Serve as a dip with crackers, chips, or vegetable dippers.
Makes about 1 1/2 cups of clam dip.

Tricky Crab Triangles

Here is a great recipe that I tried last weekend…it was so good. If you like seafood and crab meat then you have got to try this one. And it is just so easy to make! Took all of 5 minutes it seemed. And this makes for a great appetizer or things to have out during a party – a halloween party!

one stick (1/2 cup) melted butter
one 6 1/2 oz can crab meat
1 small jar (approximately 5 oz) Kraft Old English cheese
1/2 cup mayo 1/2 tsp. garlic salt
one package split English muffins

Combine first 5 ingredients, spread on muffins, put on cookie sheet and freeze. When frozen, cut into triangles (eighths). Put in plastic bag, return to freezer. When ready to use, put under broiler until bubbly.
